Greek Lamb Burgers

Build the Burgers

In a mixing bowl, combine the ground lamb, garlic and crumbled feta cheese, massaging lightly. Add in spices and gently mix. Carefully form rounded burger patties, measuring approximately 3/4" in height and just larger in diameter than your palm. Let the burgers rest for 10-15 minutes.
Tip: Similar to baking, it is important not to overwork the lamb. It can become tough if it is handled too much.

Grill 'Em

Once the barbecue is heated, gently lay the burgers and peppers onto the grates. Grill the burgers on one side until they have charred marks, usually after about 4-5 minutes. Flip the burgers and peppers. The vegetables should be visibly softer and have grill marks as well.
After 5 or so minutes, the other side of the lamb should have similar grill marks. This will leave the inside of the burgers with a faint pink colour, indicating they are cooked to a medium doneness.
Tip: If you wish to cook the burgers a little longer, only do so for about a minute each side at a time to avoid burning. The vegetables should be put onto a top rack so they do not become overcooked and mushy.

Dress to Impress
On the bottom bun, layer crisp spinach, a sliced tomato and the cooked lamb patty. Gently place a few of the grilled peppers on top, as well as a dab of the tzatziki. On the top of the bun, spread some spicy hummus and sprinkle lightly with salt and pepper.
Compliment with a side of grilled peppers and Greek salad with homemade drizzled dressing.
