island lobster rolls.
If you asked J what the highlight of PEI was, he would probably tell you the lobster. On our first full day, we went to the beach and stopped by a local favourite restaurant - Richard's. J had a lobster roll there that was absolutely huge and amazing. It is safe to say it was the best lobster roll either of have ever had. Seriously, if you ever visit the island you have to go there!
After that, there were several homemade lobster rolls for lunch and dinner. I wouldn't be surprised if the boys even snuck some in for breakfast in the morning when us girls weren't looking. Each time we tried to duplicate the roll, we definitely got better at it. |
ingredients.
Serves 2; Double for 4
2.5 cups cooked lobster
1/3 cup mayonnaise 2 green onions, chopped 2 stalks celery, chopped 2 of Boston lettuce Butter |
1/2 tbsp lemon juice
1/2 tsp salt 1/2 tsp pepper 1/4 tsp hot sauce (optional) 2 Buns |
instructions.
- PREP IT. Begin by chopping the green onion and celery into small pieces. Wash the lettuce and pat dry.
Preheat the oven to 350 degrees. - MAKE THE LOBSTER MIX. In a medium mixing bowl, break the cooked lobster into large chunks. Mix with the mayonnaise, lemon juice, salt and pepper thoroughly.
The key is to make sure that the lobster is evenly coated but that the mayonnaise does not take away from the seafood flavour.
Once well coated, add the celery, onion and hot sauce (if desired), stirring gently until the mixture is well combined. - TOASTY BUNS. If you prefer your bun toasted, lightly spread butter along the inside. Some people prefer hot dog buns, while others prefer dinner rolls. As long as they are fresh, anything will work.
Once the butter is spread, place the buns butter side up onto an oven safe pan and pop into the oven for 3-5 minutes or until golden brown. You may wish to flip the buns butter side down for another 3-5 minutes as well to toast the outside more as well. - SPOON IT. Once the buns are ready, lay the washed lettuce inside of the bun and spoon the delicious lobster mixture on top. Sprinkle with salt and pepper for additional flavour.
